VEGGIE BURGER RECIPE
A great alternative to the traditional burger.
Serves 2
What you'll need:
1 × 400 g tin black beans, drained
and rinsed (240 g drained)
45 g breadcrumbs
20 g onion, grated
1 tsp chilli powder (more if you like it spicy)
1 medium egg
pinch of salt and pepper
1 tbsp rapeseed oil
1 tbsp mayonnaise
dash of hot sauce
2 sandwich breads (80 g)
40 g Cheddar cheese, sliced
50 g salad leaves
85 g tomato, sliced

Method:
1. Mash the black beans in a bowl until you have a mix of mushy and whole beans.
2. Mix the breadcrumbs, onion, chilli powder, egg and a pinch of salt and pepper. Add a splash of water if the mixture looks too dry. Set aside for 5 minutes.
3. Divide the bean mixture into two separate balls and form two burger patties.
4. Add the oil to a large pan on a medium to high heat. Cook the burgers for 4–5 minutes on each side until browned.
5. In a small bowl, mix the mayonnaise and hot sauce.
6. Serve each burger on a toasted sandwich bread, topped with the cheese, salad leaves, tomato and spicy mayo.
