Workers travel around the estate on bikes, tending the vines using natural methods in order to produce the best quality wines. Derry Clarke from Michelin-star L’Ecrivain restaurant in Dublin is also known for his environmental practices including his promotion of the use of organic food and non-genetically modified foods. His award-winning restaurant has built itself a reputation for innovative cooking using the very best of Irish produce from small indigenous producers all in-season. Renowned for his culinary expertise, his two cookbooks are a must-have for any keen cook.
