How to make Veggie Bean Casserole

A while back we posted a recipe for a delicious blackcurrant pavlova by Louise Clark of Nude Food café in Dungarvan. Here's another delicious and healthy recipe by Louise - also featured in our newest issue, in shops now.

Veggie Bean Casserole

This casserole is a favourite in the café – it warms you up after a hard day’s work as well and is packed full of good carbs and plenty of fibre.

What you'll need:

  • 1 tin mixed beans, or if you have the time, dried beans that have been soaked overnight
  • Mixed seasonal root vegetables such carrots, parsnips, sweet potato, turnip, squash, and some red onions.
  • 1 red chilli - leave in the seeds if it’s a real winter warmer you want!

Instructions:

Peel and cut the vegetables into bite-sized pieces, placing in a roasting tin and drizzle with olive oil. Roast in a preheated oven at 180C and for about 45 minutes. For the sauce, use a good homemade tomato sauce, although you can opt for a quality shop-bought version or jar of passata if time is an issue. Mix the roasted vegetables, beans and tomato sauce together and heat on the hob. Then place half of the mixture into an oven proof dish, adding a generous fistful of cheddar cheese, and top with the remaining casserole. Sprinkle the top with cheddar cheese. (I recommend Dubliner cheese because it’s full of flavour and it melts really well). return it to the oven to melt the cheese. In the cafe, we drizzle over some of our coriander oil to serve, but it’s just as tasty eaten as it is!
