These chocolate chip cookies are sugar AND gluten free...

Recipes free from sugar and gluten in no way mean fun-free.

Makes: 24

Ingredients

185g almond flour or blanched almonds (available in handy packs from Tesco, Lidl or Aldi)

30g coconut flour (from your local health food shop)

1/2 teaspoon sea salt

1/2 teaspoon baking soda

1 egg

1 tablespoon vanilla extract

107g melted butter or coconut oil (500ml tubs available at Tesco from just €1.99!)

150g melted raw or set honey

135g plain chocolate chips

Method

  1. Preheat your oven to 177°C
  2. In a mixing bowl, combine flours, sea salt and baking soda
  3. In a smaller bowl, combine egg, vanilla extract, coconut oil and honey and mix well
  4. Add your wet ingredients, ensuring you incorporate all of the ingredients
  5. Fold in your chocolate chips
  6. Using a tablespoon, spoon the batter onto a parchment lined baking tray, leaving room for the cookies to spread while baking
  7. Place in the oven and bake for 13-15 minutes or until done
  8. Remove and leave on a cooling rack
